We collect the olive when it is in its most early maturity phase: green when it holds the more qualities, putting first the quality over the efficiency in quantity typical of the black olive. From the tree to the grinding in less than 3 hours, our mill is in the heart of our growing fields, which makes us capable of milling the fruit which has been just collected.

 The milling is done completely by mechanical means, without aid of chemical components and always in cold, so the olive keeps all its properties. After extracting the precious olive juice, we store it in an inert atmosphere so all its qualities are preserved.

All of that added to the good work of our human resources  that encapsulates the traditional knowing of the art of the growing of olive trees, and the contributions of our innovative and reaserching staff, give as a result our excellent EVOO.
